The peachy varietal stonefruit characters becomes prominent, together with a noticeable mineral quality and the beginnings of honey toast as it evolves. Wonderful upon release, expect Fox Creek to be at its very best alongside fine food.

The Burgundian style of Chardonnay, vinified from choice parcels of Adelaide Hills fruit, artfully oak barrel fermented for palate weight and complexity, mouthfilling, structured and refined. A prominent nose of grapefruits and peach, its mealyness and saline savouryness are supported by apple custard creamyness, lees autolysis and tight mineral backbone. Estella Floris Willis was a pioneer and clan matriarch who loved good wine, her brood took up viticulture in the greater Geelong region and established the Australian icon brand known as Scotchmans Hill.

The generously proportioned, big boned, leesy French oak genre, Dijon Bernard Clones 76 and 95, harvested off fully mature vines, thirty years of age at Charleston in the Adelaide Hills. Grapes are destemmed and pressed for vinification on gross solids before transfer to French oak hogsheads for completion of ferments, in the old world way. The distinguished Laira property was established by Captain Stentiford in 1893 on a premium parcel of choice Coonawarra Terra rossa soil. Adelaide Hills are but an hour's drive from Bleasdale but the style of Chardonnay grown to the cool ripening aspects of elevated, undulating hillsides is a world away from that grown to the Bleasdale property at Langhorne Creek. The Adelaide Hills style is distinctly crisper and more aromatic, one could say it even tastes chilled at room temperature. An extravagant course of barrel ferments, wild yeast vinification and lees exposure makes a richly textured Chardonnay wine with good colour, savoury vanillan aromatics and solid palate structure.

For aspirants in pursuit of nothing but the best, hand picked and whole bunch pressed into a high proportion of new French oak for a wild indigenous yeast ferment, completion of malolactic and nine months lees stirring battonage. Each barrel is pointedly encouraged to complete its course as an individual wine until the final assemblage. Intensely aromatic of white nectarines, apricot and grapefruits over subtle creamy cashew and nougat richness, a richly textured, weighty palate framed by bright acidity and a veneer of the most delicate, showroom oak.

Barossa makes a gentler style of Chardonnay. The Schrapel family had the foresight to sow Chardonnay vines long ago, the quality of fruit that grows from these old plantings is now outstanding. A fortnight of ferment is followed by two months of lees stirring battonage on sedimentery lees. Grapefruit, apples and pears to the bouquet, the palate flows with delicate flavours, bakery and butternut, golden apple, peaches and quince. McLaren Vale makes august Chardonnay wines, multi dimensional, seamless and affable. Beresford planted their rootstock in the 1960s and now host some of the most auspicious Chardonnay vines. Barrel fermented in a high proportion of new French oak and treated to six months on yeast lees sediments to achieve palate flavour and textural richness. Lifted crème brulee, nectarine and peach, its luxurious French vanilla toastyness and sound weight of fruit makes Beresford the Chardonnay of choice to match white meats and roast game.
